Preheat oven 325 F degrees grease and parchment line your pan (they are sticky!) They seem to fall in the middle as cupcakes or cake, so use a smaller sheet pan for more firm brownies.
Prep time 15 minutes, cook time 40 minutes
- 1 1/4 cups almond flour1
- /2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 large eggs at room temperature
- 3/4 cup + 2 Tbs maple syrup
- 1 Tbs vanilla extract
Frosting:
4oz unsweetened baking chocolate cut into small piece
2 Tbs or more maple syrup to taste
1 cup fresh fruit sliced (optional for garnish)
Mix together dry ingredients. In a separate bowl beat eggs, add maple syrup and vanilla extract until well mixed. Combine and stir both mixtures thoroughly with a whisk.
Pour into your pan and bake until a toothpick comes out clean, around 40 minutes. Cool 20-30 minutes before frosting.
To make the frosting: Combine chocolate bits and maple syrup in a double boiler with a cup or more boiling water between the pot and mixing vessel, use a wood spatula to mix and add more syrup to taste. Spoon over the brownies and serve immediately.
Any conventional frosting recipe with butter and powdered sugar can work as well.
